This is one of my absolute favorite recipes. I have been working on this one for about 2 years now and it just keeps getting better. I was inspired by one of Tony Bourdain's recipes in his Les Halles Cookbook and then ran with it. The actual image of the recipe is an excerpt from the cookbook I am working on so any comments would be appreciated.
